I was going to post this about a month ago but got quite busy with work and personal stuff. Anyhow, for those reading my blog know that my favorite cookbook of the moment is Ottolenghi. I fell in love with their cuisine about 4 years ago on a trip to London to visit the guy I was dating at that time. Anyhow, I found out that Yotam Ottolenghi is a contributing food journalist for the Guardian in the UK and shares some of his favorite vegetarian recipes. Recently, I tried his laksa recipe which was easy and out of this world. Laksa is one of my favorite Southeast Asian dishes. It's basically a curry soup with rice noodles. It is very nutritious, low in calories and is gluten free!
The plan was to use the mortar and pestle that I carried from Cambodia, thru Laos, Thailand and Japan. I have never used it and it would be perfect to make a curry paste which is the key to a good Laksa.
However, I learned from reading Yotam's recipe that a food processor will speed things up. So, as I happened to be in a lazy mood that day (which BTW seems to be more of a norm lately), I used my mini cuisinart to make the paste. The curry was not a smooth as it would have been with the mortar and pestle but still did it's job.
It was so easy to make but one must find fresh curry leaves which could be a challenge. Fortunately, there are many Indian grocers in NYC so I had no problems. I would definitely make this again and next time will try it with the mortar and pestle.
