Last Sunday, while at the Farmer's Market in Malibu, I bought beautiful green chiles, cilantro, ginger, spinach and lemons all for less than 5$! I also found a stand that had green lentils so decided to make a dal to eat for the week with some basmati rice.
One of my favorite cookbooks on Indian cooking is Madhur Jaffrey's "Indian Cooking". I personally find Indian cooking to be time consuming but Madhur Jaffrey modifies the recipes so it is easy to cook in an "American" kitchen. This recipe is so easy yet very nutritious and filling. Just serve it with a cucumber and tomato salad dressed in yogurt dressing and a side dish of basmati rice and you have a very exciting and healthy vegetarian dish. It also keeps well and the flavors deepen as the days go by. It is also non-allergenic so a great meal for those going on a detox diet.

Put 7oz lentils and 750ml water in a heavy pan ( I used my favorite French copper pot), bring to boil, cover and simmer for 1hr.
In large frying pan, saute, 2 fresh green chillies and 1tsp grated ginger for about 10 seconds in some olive oil or ghee if you have it. Add one bunch finely chopped cilantro and 1.25 pounds chopped spinach and saute until spinach has wilted.

Add to the lentils in the pot. Salt to tast and simmer for 20 min or so.

Finish with pepper and some lemon juice to taste. And your done.
