Beach Weather
Detox is going well despite enjoying 1/2 bottle of wine last night. Just had to have a glass or two to wind down. I went for a hike today surrounded by pollen and wild flowers and felt great! So yes, the clean eating seems to be helping with my allergies. I'm also sleeping well. Still tired in the mornings, but believe it will change by continuing to avoid allergenic foods. So this weekend, my main detox meal consists of ratatouille and Quinoa. Quinoa is a grain from South America and is nutty, easy to make and delicious. Just boil double the amount of water, stir in Quinoa, cook for 10-15 min, remove from heat, cover and in about 10-15 min, done.
The ratatouille I made is my quick version. Just cut up zucchini, squash, colorful peppers, eggplant and onions, sprinkle minced garlic and salt and then pour a generous amount of very high quality olive oil. Bake in oven 1-1.5hours at 350F depending on the volume of veggies. All the veggies should be soft. After removing from oven, sprinkle a handful or two of fresh basil and serve with Quinoa. Healthy, satisfying, clean and delicious.
I bought my veggies at Whole Foods. But I'm learning that Whole Foods practices are questionable. An expose was done by ABC TV here in the States, suggesting that Whole Foods marketing of organic produce is questionable as most of it come from China! Anyhow, it is always best to support local farmers so from now on, all my produce is coming from the farmer's market, fish from Santa Monica Seafood and beef/chicken from PC Greens in Malibu.
